Part of the Rosaceae family, which includes roses, plums, cherries, peaches, apricots, pears, raspberries, strawberries and almonds.

There are over 7500 (2300 in the UK) apple cultivars - that's a lot of crunching. Supermarket cultivars have dictated availability, most grown abroad. In recent years there have been many more English grown apples available, offering a rich seam of scents, taste, shape, colour and texture. With community orchards being planted countrywide, and windfall of "Apple Days" to choose from the English apple, an important part of our heritage, is here to stay.

The first Bramley tree grew in Brailsford cottage, Nottinghamshire, 1809, from the pip sown by a young girl, Mary Ann Brailsford. Nearly 40 years later Matthew Bramley, bought the cottage and the tree was still going strong. This enterprising fellow sold cuttings to a local nurseryman, the rest is history.

The Bramley is a good "cooker" due to high acid/low sugar content, and keeps its flavour nicely. Some eating apples are also good cookers, literally all-rounders.

Apples ripen due to low concentrations of the plant hormone, ethylene. A cool temperature slows this process.
