In the fridge for a few days, preferably in a paper bag.

Choose
Smooth, fresh, slightly fragrant and firm mushrooms. Avoid those that are withered, bruised or wet.

Soup, omelette, stew, fried with garlic, grilled, stuffed, pate and more.

We sell flat (portabello), button and open cup mushrooms that have been cultivated in tunnels, known as field mushrooms.
Mushrooms were used in ancient medicine and herbalism, first sold as a food in the 18th century.
If you are foraging in the wild take much care, and remember, "there are either bold or old mushroom collectors - not bold and old".
