Caramalised Onion Soup

Ingredients

3 large onions

Vegetable stock (or meat stock)

2 cloves of garlic

1 teaspoon of sugar

Method

 

  1. Thinly slice the onions.
  2. Fry in oil until soft on low heat (say 10 minutes)
  3. Add the sugar
  4. Fry on a very low heat (could take up to 40 minutes), very slowly until onions turn golden brown. As the sugars are released from the onions they will caramelise. Taste one - heavenly.
  5. Add stock and garlic. Splush of red wine if you fancy, to darken.
  6. Cover and cook on low heat for at least 10 minutes, longer of possible.
  7. Serve and devour.
