Caramalised Onion Soup
Ingredients
3 large onions
Vegetable stock (or meat stock)
2 cloves of garlic
1 teaspoon of sugar
Oil
Method
- Thinly slice the onions.
- Fry in oil until soft on low heat (say 10 minutes)
- Add the sugar
- Fry on a very low heat (could take up to 40 minutes), very slowly until onions turn golden brown. As the sugars are released from the onions they will caramelise. Taste one - heavenly.
- Add stock and garlic. Splush of red wine if you fancy, to darken.
- Cover and cook on low heat for at least 10 minutes, longer of possible.
- Serve and devour.
