Ingredients

2 large parsnips

100g parmesan (or other hard cheese, such as vegetarian Gran Moravia)

100g breadcrumbs

Plain flour

1 egg

Salt and pepper to season

Half teaspoon of cinnamon or quarter of nutmeg

Method

  1. Peel the parsnips and cut them into chunky wedges
  2. Boil or steam for 5 minutes
  3. Mix the breadcrumbs with the cheese
  4. Season the flour with salt, pepper and your chosen spice
  5. Roll each wedge in the flour, then in the beaten egg and then in the breadcrumb/cheese mix
  6. Place the parsnips on an oiled baking tray, and bake for 35 - 40 minutes at 180°C, carefully turning once so beautifully browned
