Parmesan parsnips
Ingredients
2 large parsnips
100g parmesan (or other hard cheese, such as vegetarian Gran Moravia)
100g breadcrumbs
Plain flour
1 egg
Salt and pepper to season
Half teaspoon of cinnamon or quarter of nutmeg
Method
- Peel the parsnips and cut them into chunky wedges
- Boil or steam for 5 minutes
- Mix the breadcrumbs with the cheese
- Season the flour with salt, pepper and your chosen spice
- Roll each wedge in the flour, then in the beaten egg and then in the breadcrumb/cheese mix
- Place the parsnips on an oiled baking tray, and bake for 35 - 40 minutes at 180°C, carefully turning once so beautifully browned
