Pear, Cucumber, Caraway and Honey Salad

Ingredients

2 pears

1 cucumber

4 teaspoons lemon juice

1 dessertspoon of runny honey

1/2 teaspoon caraway seeds

Pinch of salt

Sprinkling of chops mint and some tips for decoration

Method

  1. Mix the honey, lemon juice, salt and caraway seeds together in a bowl or jug
  2. Peel and slice the pears, and slip them into the honey/lemon/salt/caraway mix
  3. Roughly chop the mint
  4. Slice the cucumber and slip, along with the mint, in with the pears
  5. Arrange beautifully on a plate or bowl
  6. Garnish with mint tips
