This fragrant fruit is becoming more in top restaurants. I chose to top it with crumble and make that hearty warming favourite.

Tips

Buy enough quince to make membrillo, "quince cheese/paste" and enjoy this exotic tasting fruit all year round.

Quince Crumble

Ingredients

3 quince

3 apples

200g plain flour

100g demerara sugar

100g butter

Few extra teaspoons of sugar

 

Serve hot or cold with custard, ice-cream, creme fresh, cream etc (and a smile)

Method

  1. Peel and chop the quince
  2. Cook with a little butter and sugar until softened (about 10 mins)
  3. Peel and chop the apples
  4. Pop the quince and apples in the base of an ovenproof dish, sprinkle with few teaspoons of sugar
  5. I also added a little water - these aren't particularly juicy fruit and I love it when the fruit juice erupts through the crumble whilst cooking
  6. Make the crumble mix by rubbing the butter into the flour and sugar
  7. Top the fruit with the crumble mix
  8. Pop in a pre-heated oven at 190°C for 35 to 40 minutes, or until the crumble begins to crisp
