Chef says
This fragrant fruit is becoming more in top restaurants. I chose to top it with crumble and make that hearty warming favourite.
Tips
Buy enough quince to make membrillo, "quince cheese/paste" and enjoy this exotic tasting fruit all year round.

Quince Crumble
Ingredients
3 quince
3 apples
200g plain flour
100g demerara sugar
100g butter
Few extra teaspoons of sugar
Serve hot or cold with custard, ice-cream, creme fresh, cream etc (and a smile)
Method
- Peel and chop the quince
- Cook with a little butter and sugar until softened (about 10 mins)
- Peel and chop the apples
- Pop the quince and apples in the base of an ovenproof dish, sprinkle with few teaspoons of sugar
- I also added a little water - these aren't particularly juicy fruit and I love it when the fruit juice erupts through the crumble whilst cooking
- Make the crumble mix by rubbing the butter into the flour and sugar
- Top the fruit with the crumble mix
- Pop in a pre-heated oven at 190°C for 35 to 40 minutes, or until the crumble begins to crisp
