Use swede, not turnip ;-)

Swede Bake

Ingredients

A swede

A mug of breadcrumbs

75ml double cream

2 eggs

1/2 nutmeg, grated

1 tbsp of honey

Salt and pepper to season

Method

 

  1. Peel, chop and boil the swede (keep a bit of the cooking water)
  2. Soak the breadcrumbs in the cream
  3. Puree in a food blender (or mash to within an inch of its life)
  4. Add some of the cooking water until the swede is thick but runny
  5. Add the honey, nutmeg and salt/pepper to taste - stir
  6. Allow to cool (maybe do a little dance?)
  7. Beat in the eggs
  8. Pour into a well greased (or lined with greaseproof paper) dish and bake at 180°C for 45 mins/an hour or until browned
  9. Serve in neat little, squares, I had mine with salad, flaked, toasted almonds and balsamic vinegar dressing
