Tips
Use swede, not turnip ;-)
Swede Bake
Ingredients
A swede
A mug of breadcrumbs
75ml double cream
2 eggs
1/2 nutmeg, grated
1 tbsp of honey
Salt and pepper to season
Method
- Peel, chop and boil the swede (keep a bit of the cooking water)
- Soak the breadcrumbs in the cream
- Puree in a food blender (or mash to within an inch of its life)
- Add some of the cooking water until the swede is thick but runny
- Add the honey, nutmeg and salt/pepper to taste - stir
- Allow to cool (maybe do a little dance?)
- Beat in the eggs
- Pour into a well greased (or lined with greaseproof paper) dish and bake at 180°C for 45 mins/an hour or until browned
- Serve in neat little, squares, I had mine with salad, flaked, toasted
almonds and balsamic vinegar dressing
